I suppose they are simply too busy dealing with developing the plot to worry about such things. Or maybe it is just more dramatic to suddenly hang up. What ever the reason for this, you can't deny it happens frequently, and this supercut of several abrupt movie phone call hangups is probably just the tip of the iceberg.
