Most of the food we eat doesn't really resemble what it was before we decided to eat it. It gets filleted or ground up or rolled into pretty little pinwheels. For a brave few, though, eating food shaped like itself is a bold and noble calling. It connects them to the earth in a way that it completely without artifice or posturing. It is green without being green, local without being local. For those who eat pork rinds molded into the shape of a pig, the idea of eating any other way is simply unthinkable.
