In Japan and parts of the U.S., sushi is sometimes served on a conveyor belt. When you see something you like come your way, you just pull it off the belt and go to town. Each plate has a color on it that indicates the price of the item, so at the end, the waiter or waitress looks at your stack of empty plates and tallies up the damage.
